Ingredients
- 2lbs of beef or goat chunks (Beef chuck roast, brisket or shoulder work well)
- 1 diced onion
- 1 diced carrot
- 1 diced bay leaf
- 4 cloves of garlic, minced
- 4 cups of beef broth
- 3 dried chilis (guajillo, ancho, or a mix)
- 2 cloves
- ½ teaspoon of oregano
- 1 teaspoon of cumin
- 1 teaspoon of paprika
- ½ teaspoon of black pepper
- 1 teaspoon of salt
- Place the beef, onion, carrot, bay leaf, and garlic into the Crock Pot.
- Pour the beef broth over the top and stir.
- Place the dried chilis into a small bowl and cover with boiling water. Soak for 15 minutes.
- Add the soaked chilis, cloves, oregano, cumin, paprika, pepper, and salt to the Crock Pot. Stir to combine.
- Cook on high for 6-8 hours or low for 8-10 hours.
- Once done, the stew should be thick, fragrant, and a deep reddish-brown colour.
- Serve with warm tortillas, guacamole, lime wedges, and cilantro.
