Ingredients

  • 6 cups of chopped tomatoes
  • 1 medium onion, diced

  • 2 teaspoons of sugar
  • 1 teaspoon of ground cumin
  • 1 teaspoon of salt
  • 1 teaspoon of ground black pepper
  • ½ cup of cilantro, chopped

Instructions

  • Add the tomatoes, onion, garlic, jalapeño peppers, lime juice, sugar, cumin, salt, and pepper to the Instant Pot. Stir to combine.
  • Close the lid and make sure the valve is in the sealing position. Select the “Manual” setting and adjust the time to four minutes.
  • Once the timer is up, carefully release the pressure using the “natural release” method.
  • Vent steam until pin drops. Open lid and stir in cilantro.
  • Ladle hot salsa into prepared canning jars, leaving a ½-inch headspace. Wipe the rims before adding lids and screw bands.
  • Place a canning rack (which came with the Instant Pot) into the bottom of the pot. Carefully lower filled canning jars into the pot using a jar lifter.
  • Secure the canning lid onto the Instant Pot and set the valve to the sealing position. Select the “Manual” setting and set the time to 20 minutes.
  • When the time is up, allow the pressure to release naturally.
  • Carefully remove the jars using the jar lifter and test to make sure the jars are sealed. Label the jars with the date.
