How to Can Tomatoes in Instant Pot
Cooking and canning your own tomatoes is a great way to get the delicious flavor of fresh tomatoes all year round. Using the Instant Pot for canning tomatoes is a quick and easy way to get the job done.
Things You’ll Need:
- Oven-safe jars
- Tomatoes
- Instant Pot with steam rack
- Saucepan
- Salt
- Water
- Jar lids
- Ring bands
Step 1: Preparation
Before you start canning your tomatoes, you need to prepare the jars. Wash the jars, lids, and ring bands. Once they’re clean, place the lids and ring bands in a saucepan. Fill it with water and let them simmer on low heat to soften the asphalt seal on the lids.
Step 2: Load the Tomatoes
Place the tomatoes inside the oven-safe jars. Fill the jars about ¾ full and put a pinch of salt in each one. Make sure the tomatoes have enough room to move and won’t spill out when you close the lids.
Step 3: Add Water to Instant Pot
Next, pour in enough water to cover the bottom of the Instant Pot. Place the steam rack inside the pot and make sure it’s low enough so the tomatoes won’t get submerged in the water.
Step 4: Pressure Cook
Close the lid of the Instant Pot and seal the pressure cooker. Then, set the pot to the “Canning” setting and set the time to 10 minutes. Once the timer is done, release the pressure and open the lid.
Step 5: Seal the Jars
Carefully remove the jars from the Instant Pot with an oven mitt or jar grabber. Place the lids on the jars and screw on the ring bands. Let the jars sit undisturbed for 12-24 hours to allow them to seal.
Step 6: Enjoy!
Once the jars are sealed, you can store them in a cool, dry place for up to a year. Enjoy your homemade canned tomatoes!
