Cooking Tamales in an Instant Pot

Tamales are a delicious and easy-to-make Mexican dish. Traditionally, tamales are cooked in a steamer basket – filled with fragrant vegetables, savory meats, cheeses and delicious sauces – over boiling water to create a flavorful stew. But did you know that you can also cook tamales in an Instant Pot? Here’s how to do it:

Ingredients

  • 6 corn husks
  • 1 cup masa harina
  • 2 tablespoons butter, melted
  • 1 1/2 cups chicken broth
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon garlic powder
  • 1/8 teaspoon cumin

Instructions

  • Soak the corn husks. Soak 6-8 corn husks in warm water for 10-15 minutes. The corn husks will become soft and pliable as they absorb the water.
  • Mix the filling. In a medium bowl, combine 1 cup masa harina, 2 tablespoons melted butter, 1 1/2 cups chicken broth, 1 teaspoon chili powder, 1/2 teaspoon salt, 1/4 teaspoon garlic powder, and 1/8 teaspoon cumin. Stir vigorously to combine.
  • Fill the husks. Take 1 of the softened corn husks and spread a thin layer of the filling into the center of the husk. Fold the sides of the husk over the filling, tuck the ends under the tamale, and set aside. Repeat this process with the remaining husks and filling.
  • Cook the tamales. Place the filled husks into the Instant Pot. Put the lid on the pot, set it to Manual mode and set the timer for 25 minutes. When the timer goes off, let the pressure release naturally for 10 minutes, then use the quick release lever to release the remaining pressure. The tamales are ready to serve

With the help of an Instant Pot, you can make delicious tamales in a fraction of the time it takes to make them with a traditional steamer. Give this recipe a try and enjoy a delicious Mexican meal anytime!
