How to make Chitterlings in a Crock Pot
Chitterlings, or chitlins, are a traditional African-American dish made from pork intestines. Though not always easy to stomach, chitterlings can be a real treat when prepared properly. Here’s how to make delicious chitterlings in a slow cooker or crock-pot.
Ingredients:
- 1 lb of pork chitterlings
- 3 bay leaves
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 teaspoon of sugar
- Salt and pepper to taste
- Optional: 1/2 teaspoon of cayenne pepper, if desired
Instructions:
- Rinse and rinse again: Before cooking, rinse the chitterlings with cold water and scrub with a brush to remove dirt and debris. Then soak them in a large bowl of cold water and rinse them 3-4 times until the water runs clear. This will help get rid of any fishy smell.
- Prepare: Add all ingredients except the chitterlings to the crock pot. Give it a good stir.
- Cook: Add the chitterlings to the crock pot and stir everything together. Cover and set the crock pot to cook on high for 6-8 hours, stirring occasionally.
- Serve: When finished, chitterlings should be tender and dark in color. Serve hot with your favorite side dishes.
