Gaby’s Chicken Pot Pie

Ingredients
- 1 teaspoon olive oil
- 2 boneless, skinless chicken breasts
- 1 onion, chopped
- 2 cloves garlic, minced

- 3/4 cup half and half cream
- 1 teaspoon dried thyme
- 1/2 teaspoon black pepper

Instructions
- Preheat the oven to 350°F. Grease a medium baking dish with butter or cooking oil.
- In a large skillet, heat the olive oil over medium-high heat. Add the onions and garlic and cook until softened, about 5 minutes.
- Add the chicken and cook until browned and cooked through, about 6 minutes.
- Add the flour and cook for 2 minutes, stirring constantly.
- Add the chicken broth, half and half cream, thyme, and black pepper. Bring to a boil, reduce heat to low, and simmer for 5 minutes.
- Remove from heat and add the frozen peas and corn.
- Pour the mixture into the prepared baking dish. Cover with the prepared pie crust and cut vent holes in the top.
- Bake for 30–35 minutes, or until golden brown and bubbly.
- Serve warm with a green salad and garlic bread, if desired.
